Classic Banitsa

Ingredients:

1 package of Jovana’s hand-rolled dough sheets (400 g)
125 g melted butter
6 eggs
200 g yogurt
1 tsp baking soda
300 g  cheese

Instructions:

1. In a bowl, mix the yogurt and baking soda, and let the mixture bubble.

 

  1. In a large bowl, beat the eggs and add the bubbly yogurt mixture.

 

  1. Crumble the cheese and add it to the egg mixture, stirring well to combine.

 

  1. Take each sheet of dough sheets and brush it lightly with melted butter (about 1-2 tablespoons).

 

Place 3 tablespoons of the egg mixture on each sheet and roll it up.

 

  1. Coil the rolled phyllo dough into a spiral, starting from the center of a baking dish, and continue adding each subsequent roll around the previous one until all the dough is used.

 

  1. If there is any leftover egg mixture, spread it on top along with the remaining melted butter.

 

  1. Bake in a preheated oven at 170 degrees Celsius (340 degrees Fahrenheit) for about 30-40 minutes. If the top browns too quickly, cover it with aluminum foil.

 

  1. Once baked, allow it to cool if desired. You can eat it warm of course.
