Ingredients:
1 pack of hand rolled crusts (Jovana – 400g)
200g butter
600g animal cream
5 eggs
1 tsp vanilla extract
Zest of 2 lemons
125g blueberries
Instructions:
1. Brush each pastry sheet with melted butter and roll it up like a fan. Arrange them side by side in a rectangular baking dish. If you have any leftover butter, pour it on top once the dish is filled. You can also use a round baking dish by rolling the sheets.
2. Bake the pastry sheets in a preheated oven until golden brown (about 10-15 minutes).
3. Meanwhile, beat the eggs and sugar together by hand, then add the cream, vanilla extract, and lemon zest.
4. Pour the cream mixture over the hot pastry sheets and place the blueberries in between the layers.
5. Return the banitsa to the oven and bake until the mixture is set (about 25-30 minutes).
6. After baking, let it cool, dust with powdered sugar, and cut into pieces.
